Veggie Scramble On Toast

(2 servings)    Printable Version
  • 1/2 green pepper
  • 1/2 red pepper
  • 1/2 leek (or onion)
  • 1/2 cup spinach - finely chopped
  • 4 eggs
  • dash of seasoned salt
  • dash of ground black pepper
  • dash of Old Bay seasoning (optional)
Chop all of the vegetables finely and saute until moderately soft (or al dente depending on your taste). When veggies are ready, add whisked eggs to pan, add salt and pepper and cook until desired consistency.

Serve on top of a slice of whole grain toast.


A great way to increase your daily veggie intake and my two year old loves it!

Very tasty. The recipe didn't have heating instructions so I used medium to soften the veggies and then turned it down to medium low when I added the eggs. Worked out well.
