Orange Walnut French Toast (Baked)

(4 servings)    Printable Version
  • 1 8-ounce loaf day-old Italian bread - cut into 1 inch slices
  • 4 eggs
  • 2/3 cup orange juice
  • 2/3 cup milk
  • 1/2 cups walnuts - coarsley chopped
  • 1/3 cup butter - softend
  • 1/2 to 1 teaspoon grated orange peel
  • 1/4 cup sugar
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon vanilla extract
In a medium bowl, combine eggs, juice, milk, sugar, nutmeg and vanilla.

Place bread in a single layer in large, flat baking dish. Pour egg mixture over bread. Turn each slice of bread one time to absorb the egg mixture. Refrigerate overnight (at least 5 hours).

To cook:

Preheat oven to 375.

Generously butter the bottom of a jellyroll pan. Arrange soaked bread slices in a single layer in pan. Sprinkle over the top with walnuts. Bake until golden, about 20 minutes. Sprinkle fresh grated orange peal on top.

Great with a pat of butter and maple syrup. Or shhh... a scoop of icecream.
