Western Omelette Frittata

  • 6 large eggs - beaten
  • 2 teaspoons vegetable or canola oil
  • 1 medium onion - chopped
  • 1/2 green pepper or red pepper or combination - chopped
  • 1/4 to 1/2 pound cooked ham - chopped
  • 1/3 cup medium-hot chunky salsa
Heat the oil in a frying pan over medium heat.

When the oil is hot, add the pepper and the onion. Stirring occasional, saute until the onions are translucent.

Add the ham and salsa. Add eggs and stir (scramble) briefly in the pan.

Allow to cook, without any more stirring, until frittata bottom is mostly set. Lift edges to allow more egg to cook. Flip and cook other side to golden brown.

Turn omelet onto a plate. Top with additional salsa. Slice in wedges to serve.

This frittata features ham, green pepper, onion and a spicy kick from salsa. If desired, sprinkle your favorite cheese on top and place under the broiler at the very end.
