Heat griddle or non-stick pan over medium heat. Spray with non-stick cooking spray. Cook sandwiches, turning once, until golden brown on the outside and there is no evidence of uncooked eggs, about 3 minutes. I link to press down on the sandwich with my spatula at the 2 and 1/2 minute point. It squeezes out any uncooked egg. To serve, cut sandwiches into quarters, sprinkle with powdered sugar and serve. The word is that this recipe was concocted be the California Kiwi Association to increase the sale of Kiwi. At first glance, you might think Kiwi and french toast would be disasterous bedfellows. Time and time again, I'm so completely amazed at the the number of things that go with maple syrup. Marketing ploy or not, this combination is a winner.
