Apple Maraschino Pancakes

  • 1/2 cup whole-wheat flour
  • 1/2 cup unbleached flour
  • 1/2 cup buttermilk
  • 1/2 cup apple juice
  • 1/4 cup chopped almonds
  • 2 large eggs - separated
  • 4 Tablespoons vegetable or canola oil
  • 1 Tablespoon brown sugar
  • 2 teaspoons juice from jar of Maraschino cherries
  • 1 and 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Makes about 10 pancakes.

In a large bowl, combine the flour, sugar, baking powder and salt.

In a separate bowl, beat egg yolks with oil, buttermilk and apple juice. Stir into flour mixture. Add chopped nuts and Maraschino cherry juice and stir until until all ingredients are moistened.

In a small bowl, beat egg whites until stiff and fold into the batter.

Spoon onto a hot, greased griddle or skillet and turn once when bubbles appear.

These are great topped with powdered sugar, whipped cream and cherries! Works wonderfully with traditional butter and maple syrup too!


Whole wheat apple pancakes with Maraschino cherry juice for flavor and chopped almonds for texture.

It was great! I topped mine with homemade chock-cherry syrup! I also used cherry juice in place of apple. On the side I took bacon and wrapped it around a cannoli form and baked it... slid it off and served it on the side with scrabbled eggs.
