Maple Toast and Eggs

  • 12 strips bacon
  • 1/2 cup maple syrup
  • 1/4 cup butter or margarine
  • 12 slices of white bread
  • 12 large eggs
  • salt and pepper - to taste
Cook bacon until crisp. Transfer to stacked paper towels to drain off excess grease. Crumble the bacon once it is cool enough to handle.

In a saucepan, heat the maple syrup and margarine over medium heat. Cook until hot and well combined.

Flatten slices of bread and then brush one side of each slice with syrup mixture. Place the bread syrup-side-down in a large greased muffin tin and press it in so it forms a cup.

Place one egg and a sprinkle of the bacon in each bread cup. Divide bacon equally among cups. Cover the muffin tin with tin foil.

Bake for 15 to 20 minutes at 400 degrees.

Bread coated in maple syrup becomes a cup to hold bacon and eggs. It's a fun recipe. A 12-cup muffin tin is required.
