Oatmeal Raisin Poppy Seed Muffins

  • 2 cups uncooked rolled oats
  • 2 cups all-purpose flour
  • 1 cup low-fat milk
  • 3/4 cup sugar
  • 1/4 cup butter or margarine - softened
  • 1/4 cup raisins
  • 1/4 cup poppy seeds
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon grated orange zest
Preheat oven to 375 degrees.

Prepare 12 muffin cups with cooking spray or paper lining.

In a large mixing bowl, sift together flour, sugar, baking powder and nutmeg.

In a separate medium bowl, beat eggs with butter (or margarine), milk and orange peel.

Combine the two mixture and stir until just mixed. Stir in oats, poppy seeds and raisins and mix well.

Fill each prepared muffin cup to about about 3/4 full.

Bake for 25 minutes or until a toothpick inserted into the center of a muffin comes out free of batter.


A hearty poppy seed muffin. The oats give this one real substance. A hint of orange zest and nutmeg add nuance to the flavor.

Tried this recipe, the batter was more like a cookie dough and bland tasting. Made the muffins anyhow and they were tough and tasteless. Perhaps the 2 cups flour and 3/4 cup sugar should be 3/4 cup flour and 2 cups sugar...? Anyway, I believe this recipe is a failure.
