Banana Bars

  • 4 cups uncooked regular OR quick oats
  • 1 and 1/2 cups mashed ripe bananas - about 3 bananas
  • 1 cup packed brown sugar
  • 3/4 cup butter or margarine - softened
  • 1/2 cup raisins (or dried prunes or apricots)
  • 1/2 cup chopped walnuts or other favorite nuts
  • 1/2 cup sunflower seeds
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
Preheat oven to 350 degrees. Prepare a 13 x 9 baking pan with cooking spray.

In a large mixing bowl, cream together the butter and sugar until consistency is "fluffy". Add egg, bananas, cinnamon and salt and stir. Add all remaining ingredients and stir until mixed well.

Spread mixtured into baking pan.

Bake about 50 minutes or until a toothpick comes out clean.

Allow bars to cool before cutting into squares and serving.


These store well in the refridgerator for a week. In fact, I like them best out of the refridgerator when they're a little cool.

These are GREAT. I agree with the first comment in that you don't need to use all the sugar. I used 1/2 cup of brown sugar, and they are still on the sweet side.

I used Splenda Brown Sugar. I think I will use 1/2 cup next time rather than a full cup. It's very sweet.
