Shipwreck Grits And Eggs

Shipwreck Grits And Eggs

(1 serving)    Printable Version
  • 1 serving grits (1/4 to 1/2 cup)
  • 2 large eggs
  • 4 slices bacon
  • either salt and pepper or butter and sugar
Cook a normal serving of grits. (Could be normal or Instant depending on your personal preference).

Fry 4 pieces of bacon so that they are crisp. (You want them crisp, so you can crumble them up).

Scramble 2 eggs.

Pour the grits out onto a plate.

Sprinkle with salt and pepper OR mix in some butter until melted (Personal preference here).

Put the scrambled eggs on top of the grits and then chop up the eggs and mix them in the grits.

Crumble bacon slices over the grits and eggs mixture.

Lick grease off of fingers.

Mix bacon, eggs and grits into a well-proportioned mix.

If you are going with the butter and sugar option, lightly sprinkle sugar over the top of the mix.

Ta-Da "Shipwreck Grits"

This was the dish that my mom always made when she needed a lot of chores done that day. It was sure to get the crew going!!

My father did this when I was growing up in South Carolina. So I did it too. And still it is one of my favorites even tho I am away from the South. I can eat it for breakfast or dinner. Never heard of putting sugar on it. Don't think I would like that at all.

One of my favorite breakfasts, but I don't scramble the eggs, I cook them over easy so the yoke can mix with the grits too. Fantastic!
