Microwave Breakfast Cobbler

  • 1 and 1/2 cups of your favorite lowfat granola cereal
  • 1 can (16 oz) drained sliced peaches
  • 1 can (16 oz) drained pear halves
  • 1 cup (6 ozs) pitted prunes -- halved
  • 3/4 teaspoon orange zest
  • 1/3 cup orange juice
In shallow microwave-safe casserol dish, layer the ingredients in this order: peaches, pears, prunes, orange peel, and orange juice. Top with granola.

Microwave on high for about 5 minutes. Let stand at least 2 minutes before serving.

Top with a dollop of vanilla yogurt if serving for breakfast; vanilla ice cream if serving for desert.


Quick and delicious. You can substitute canned mixed fruit for the peached and pears -- ounce per ounce -- for a colorful change.
