Hazelnussomeletten (German)

  • 2 Tablespoons grated hazelnuts
  • 1 egg - separated
  • 1 cup milk
  • 3 Tablespoons flour
  • 1 Tablespoon sugar
  • a pinch of salt
  • 2 Tablespoons butter
In a small mixing bowl, beat the egg white until foamy peaks form.

In a medium mixing bowl, combine flour and milk. Stir in egg yolk and salt, fold in sugar, hazelnuts and add stiffly beaten egg white.

Melt butter in a sturdy frying pan and fry omelet golden brown on both sides.


Hazelnussomeletten means hazelnut omelet in German. This omelet is best served with stewed fruits or berries.

Interesting recipe, but not a widespread dish in Germany. Almost closer to a pancake than an omelette. And it would be "Haselnussomelett" in correct German.

I wonder if anyone can help me figure out what I did wrong. When I put this in a skillet, it is still very frothy from beating the egg whites. Even after 10 minutes on medium heat, it won't set. The bottom started to burn, so I flipped it into another pan, and it fell apart. Now, I have a mess that is the consistency of a thick porridge. It doesn't resemble an omelette at all.

Really, really good. I'd never heard of this before. So we were experimenting and didn't know what to expect. Serving size is too small. Next time, I'll double it for two hungry people.

The recipe is very good! It should, however, be spelt 'Hasselnussomelett' instead of 'Hazelnutomeletten'. Or 'Hazelnutomelett', but that would ot exactly be English, either. Hazelnut = Haßelnuß
