Bacon and Potato Scones

(8 servings)

  • 1 cup cooked mashed potatoes (mashed without butter or milk)
  • 5 strips bacon - cooked and crumbled
  • 2 Tablespoons of bacon drippings (to coat the skillet)
  • 1 large egg - beaten
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup all-purpose flour
This recipe makes 8 scones.

In a large bowl, combine the potatoes, egg, salt, pepper, flour, and bacon and stir gently until the dough holds together.

Coat the bottom of the skillet with bacon drippings and preheat over a medium heat.

Using a 1/4 cup measure, drop the dough onto the hot skillet and fry the scones for 3 to 4 minutes on each side, or until golden brown. Drain on paper towels and serve while still warm.


A scone made from mashed potatoes and bacon. I actually use Pam spray instead of bacon grease to grease the skillet. Otherwise, it was just too much in the richness department.
