Combine: Eggs, milk, salt and mix well. Pour into a greased 9 x 13 baking dish. Bake at 325 degrees for 20 min. or until firm. Sprinkle with cheese and bake for 5 more min. Combine: Tomatoes, peppers, and seasonings in sauce pan and simmer for 30 min. or until thick. Serve warm salsa over egg casserole. Garnish with black olives and avocados.
- 9 eggs
- 1/2 cup milk
- 1/8 tsp. salt
- 1 8-oz. pkg. grated cheddar cheese
- 1 16-oz. can tomatoes
- 1 small can chopped jalapeno peppers-drained
- 1 tsp. onion powder
- 1/4 tsp. each: garlic powder & cumin
- 1/2 tsp. chili powder
