Cherry Macadamia Nut Pancakes

(4 servings)

  • 3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 6 Tablespoons sugar
  • 1/2 teaspoon baking soda
  • 1 Tablespoon baking powder
  • 3 large eggs
  • 3 cups buttermilk
  • 4 Tablespoons melted butter
  • 1 cup dried cherries - roughly chopped
  • 1/3 cup macadamia nuts - roughly chopped
Soak the dried cherries in water for 10 minutes and then drain them.

In a large bowl, sift together the flour, salt, sugar, baking soda and baking powder.

In a second mixing bowl, beat the eggs, buttermilk and melted butter together.

Add the wet mixture to the dry mixture and stir just until there are no remaining dry patches. Try not to over-mix. Batter will be slightly lumpy.

In a large skillet or frying pan over medium heat - greased with additional butter or cooking spray, dollop batter in 1/4 amounts for each pancake. Sprinkle each pancake with cherries and nuts. When the bottom is golden brown (about 2 minutes), flip and cook other side to golden brown.

Serve with a pat of butter, additional chopped macadamia nuts and warm maple syrup. Also terrific with banana slices and toasted coconut.

Buttermilk pancakes with dried cherries and pieces of macadamia nuts. Best served with fresh berries, sliced banana or toasted coconut.
