Oat and Cashew Waffles

(4 servings)

  • 2 cups rolled oats
  • 1/2 cup cashews
  • 1 pinch salt
  • 1 Tablespoon oil
  • 1 cup water
Using a food processor or a blender, grind together the oats & cashews. Be careful not to over-grind otherwise you will get a butter-like consistency.

Add the salt, oil & water & blend thoroughly.

Pour the batter into a waffle iron & leave a few minutes until cooked. Serve with plenty of maple syrup.

Note From Recipe Submitter:
I was as surprised as anyone that this recipe works so well. There's no baking powder or baking soda and I leave out any sugar or honey so the syrup (or desired topping) provides all the sweetness.



Cashews and oats are ground together to create a flavorful flour that, in turn, creates a flavorful waffle.
