Asparagus Frittata Casserole

(8 servings)

  • 3 large eggs
  • 1 and 1/2 cups low-fat milk
  • 1 teaspoon salt
  • 1 10-ounce box of frozen asparagus spears - thawed
  • 1/2 cup Monterey Jack or Cheddar cheese - shredded
Pre-heat oven to 400 degrees.

Beat eggs in mixing bowl. Add milk and salt; blend thoroughly.

Pour mixture into 9 x 13 inch greased baking pan; add asparagus.

Top with grated cheese.

Bake for 15 minutes or until firm.


This crust-less quiche or casserole has only 5 ingredients. Fresh asparagus can be used in place of frozen asparagus if desired. Just measure it out to 10 ounces.
