Breakfast Sausage Casserole

  • 6 slices day old bread - cubed
  • 3/4 pound breakfast sausage
  • 1/2 cup Cheddar cheese - shredded
  • 1/2 cup Swiss cheese - shredded
  • 5 large eggs - slightly beaten
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1 teaspoon dry mustard
  • 3/4 cup green onions - chopped
Cook and crumble the breakfast sausage in a skillet over medium heat. When browned and no longer pink anywhere, drain off grease and set aside.

Grease a 9-inch pie pan with butter or cooking spray. Place bread cubes inside the pan. Sprinkle evenly with cooked sausage followed by the cheese.

Beat the eggs with the milk. Add the salt, dry mustard and green onions. Stir well to combine. Pout this mixture over all ingredients in the pie pan.

Cover and refrigerate overnight (at least 4 hours).

Bake for 1 hour at 350 degrees or until golden brown.
