Greek Yogurt Pancakes for One

(1 serving)

  • 1/4 cup plus 2 T flour (all purpose or white whole wheat recommended)
  • 1/2 tsp baking powder
  • 1/3 cup Greek yogurt (any flavor*)
  • 1 egg OR 3 T liquid egg whites
  • 2 T milk
In a bowl, stir together the flour and baking powder. In a separate bowl, stir together the yogurt, egg or egg whites, and milk until very well combined. Pour wet into dry. Mix until just combined. Do not overmix!

Pre-heat griddle or skillet on medium. Dollop batter on griddle/skillet and spread out, as necessary, so that it forms a pancake about 3-4 inches in diameter. When lightly browned on the bottom and the edges look dry, flip and cook until slightly browned on the other side. Repeat with remaining batter. You may need to adjust the heat so that the pancakes won't brown too quickly. I make 4 pancakes out of this recipe.


* I like using vanilla yogurt to give the pancakes a more neutral taste, but you could use any flavor of Greek yogurt. If you use plain, I recommend adding a liquid sweetener so that the pancakes won't taste sour.
