Strawberry Jam Coffee Cake

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 Tablespoons butter - softened
  • 1 large egg - beaten
  • 3/4 cup + 1 Tablespoon milk
  • 1 teaspoon vanilla
  • 1 cup strawberry jam

  • For The Topping:
  • 2/3 cup brown sugar - packed
  • 2 Tablespoons all-purpose flour
  • 2 Tablespoons butter - softened
I love this coffee cake. More than once, I've had guests coming over and this recipe saved the day. The secret ingredient is... any jar of jam you have in the refrigerator. It's perfect for when you have time to bake but a trip to the grocery store is out of the question. Experiment with different jams. I've used strawberry and peach. One day soon, I'd like to try orange marmalade. Happy baking!

How To Make A Strawberry Jam Coffee Cake

Preheat oven to 400 degrees. Prepare a 9-inch square baking pan or two 8 inch round pans by coating the inside generously with butter.

Into a large bowl, sift together the flour, baking powder, and salt.

In a separate medium bowl, cream together the butter and sugar. Add the beaten egg, milk and vanilla and stir to combine.

Add the wet ingredients to the dry ingredients and mix until just combined and moistened. (The batter may seem too thick, but it will thin when the jam is added.)

Transfer batter to prepared pan. Dollop the jam on top and swirl it into the batter using the tip of knife.

In a small bowl, mix the topping ingredients together with a fork until crumbly. Sprinkle topping evenly over the coffee cake.

Bake at 400 degrees for 25 to 30 minutes or until a toothpick inserted in the center comes out clean (no batter sticking to it).
