Simple Banana Bread (U.K.)

  • 2 cups self-raising flour
  • 1/2 cup milk
  • pinch salt
  • 1 egg (lightly beaten)
  • 1/2 cup caster sugar
  • 2 large or 3 small bananas (mashed)
  • 90 grams butter
  • 1/2 teaspoon bicarbonate of soda
Sift flour and salt into a bowl, stir in sugar. Rub butter into flour mixture with fingertips until well combined. Dissolve bicarbonate of soda in milk and add to flour mixture along with egg and banana. stir until thoroughly blended and spread in a loaf tin (25*15cm). Bake in a moderate oven (180C) for 50-60 minutes until cooked when tested.


Bananas are easier to mash if they're older. Try freezing them for a day then defrost and you should be good to go if you've only got new ones. Serve hot slathered in plenty of butter. This is my gran's recipe and works every time.
