Apple Date Muffins

(12 servings)

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon salt
  • 1/2 cup date syrup
  • 1/2 cup milk
  • 1/3 cup oil
  • 1 large egg
  • 2 apples - diced
  • 1/2 cup nuts or dates - chopped
These were good, but I thought they might be better with some minor adjustments. They had a whole wheat feel despite having no whole wheat flour in the recipe. Next time, I'd consider replacing the oil with melted butter and I'd grate one of the apples to add a little more moisture to each bite. If you're looking for a recipe that uses date syrup, go ahead and try this one. They were very good warm with butter. For a superior muffin that doesn't use date syrup, try our recipe for Apple Bran Muffins and just replace the raisins with chopped dates. (The recipe on this page was submitted in 2010. It was tested and photographed in March 2017.)

Cooking Notes From Mr Breakfast

For me, this batter made 11 muffins. My cooking time was 19 minutes. I opted to use chopped pecans when it specified chopped nuts or dates.

Apple Date Muffins

Apples, dates, nuts (if you want them) and a healthy pinch of cinnamon and allspice combine to make muffins with an almost holiday-like flavor.
