Bacon And Spinach Quiche

(8 servings)

  • 1 9-inch refrigerated pie crust
  • 6 large eggs
  • 1 and 1/2 cups heavy cream
  • salt and pepper - to taste
  • 2 cups chopped fresh baby spinach
  • 1 pound bacon - cooked and crumbled
  • 1 and 1/2 cups shredded Swiss cheese
Preheat oven to 375 degrees.

In a large bowl, beat the eggs with the cream and salt and pepper.

Sprinkle crumbled bacon over the bottom of the pie crust. Top that with an even layer of spinach and an even layer of cheese. Pour the egg mixture over the ingredients in the pie crust.

Bake for 35 to 45 minutes until the egg is completely set.

Cut into 8 wedges and serve.

Tip: To make this quiche look super appetizing, set aside 1/4 cup of the crumbled bacon and 1/4 cup of the cheese and processed as written. As soon as the quiche comes out of the oven, sprinkle the set-aside cheese and bacon over the top.

This is a very easy recipe for a tasty and filling breakfast pie.
