Zucchini Quiche

(5 servings)

  • 1 cup biscuit mix
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup grated cheese
  • 1 teaspoon parsley flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium onion - chopped
  • 3 cups grated zucchini
Mix together the first 7 ingredients, then add the onion and zucchini. It will have the consistency of a thick batter. Pour into greased 10 inch pie pan or quiche pan. Cook at 350° F for 40 minutes until browned and a knife inserted comes out clean. You may add chunks of ham, browned sausage, sliced mushrooms, chopped peppers, etc. to provide additional flavors.


This is a summer favorite when there are lots of zucchini available. It's a very forgiving recipe. I always vary the types of shredded cheese and add additional ingredients (usually to the point I need an additional small pie pan to hold it all).
