Sweet Breakfast Couscous (Tunisian Mesfouf)

  • 1 and 1/4 cups skim milk
  • 1/2 cup uncooked couscous
  • 1/4 cup dried cranberries
  • 1/4 cup raisins (or chopped dates)
  • 1/4 cup chopped walnuts
  • 2 Tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 2 teaspoons of butter or maple syrup (optional)
Watch out oats! There's a new hot cereal contender in town. Couscous is made from semolina and wheat flour. It looks a bit like rice, but it's actually considered a kind of pasta. It's as easy to prepare as quick or Old Fashioned oats and it makes an amazing hot breakfast cereal. I liked this dish better than many different kinds of oatmeal. The texture is a lot like grits. In this particular recipe, the couscous really absorbed the flavors it was cooked with. I had one big serving and was kept full until lunchtime. Bottom Line: I wouldn't change a thing about this recipe. It was pretty much perfect, especially when served with a pat of butter and drizzle of maple syrup on top. How To Make Sweet Breakfast Couscous

Bring milk to a simmer in a saucepan and then stir in the dry ingredients. Remove from heat, cover and let stand 10 minutes until thickened. Top with a teaspoon of butter or maple syrup if desired.

This is one of my favorite camping recipes! For anyone who backpacks or does wilderness camping, this makes for a super easy, lightweight mix that is super delicious and gives you lots of energy for the day's hike. (Just mix in powdered milk into the couscous and pack the mixture in a ziplock bag to go.) This is also great with other easy to make grains like bulgur wheat.

In Tunisia, sweet couscous is called mesfouf and mixed with nuts, dates and spices for breakfast, or in Morocco it's a dessert called seffa and served with orange blossom water.
