Honey Pineapple French Toast

(6 servings)

  • 6 large eggs
  • 1 cup honey
  • 1 cup pineapple juice
  • 1 pinch salt
  • 12 slices Italian or other rustic bread - sliced 3/4 inch thick
  • butter for frying - as needed
  • 6 slices of fresh pineapple
In a large bowl, beat the eggs. Add the honey, pineapple juice and salt and beat until well combined.

Place bread slices one at a time into the egg mixture, flipping once and allowing to set long enough to absorb the mixture.

In a large frying pan over medium-high heat, melt about a Tablespoon of butter. Fry bread slices until golden brown on both sides. Add more butter as needed.

Top each serving of two French Toast pieces with one slice of pineapple.

Drizzle each serving with a little more honey.

I just asked my mother for this recipe. She swears it doesn't include milk (which I've never heard of in a French Toast). Anyway, she made it over the holidays and it was scrumptious. The browned honey gave each piece a sort of glaze. It might be too sweet for some, but we love it. Hope you do to.
