Irish Brown Bread

(10 servings)

  • 3 cups whole wheat bread flour
  • 1 cup unbleached white bread flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 and 3/4 cups buttermilk
  • 2 ounces premium butter - melted
  • 1 large egg - beaten
This recipe makes one regular loaf of bread of two smaller loaves.

Preheat oven to 400 degrees.

In a large bowl, mix together the flours, salt and baking soda.

In a separate medium bowl, beat the buttermilk and egg together. Add the butter and beat until smooth.

Add the wet ingredients to the dry ingredients and mix until just combined and moistened.

Transfer bater to a large loaf tin or two smaller tins.

Cook for 50 minutes or until a toothpick inserted into the center of the loaf comes out dry.

Irish brown bread is usually served on the side as part of a traditional Irish breakfast. It's a crusty, rustic quick bread. For an even heartier texture, try replacing 1/4 cup of the whole wheat flour with old-fashioned oats.
