Carne Huevos Rancheros

  • 2 pounds flank steak
  • 1 can (14.5 ounces) refried beans
  • 1 package corn tortillas
  • 2 cans (14.5 ounce) Mexican stewed tomatoes
  • 6 large eggs
Cut the flank steak into 1/2 inch strips and brown the meat over high heat in a medium pot. Add stewed tomatoes and simmer for 20 to 30 minutes or until meat is tender.

In a small pan (or in a bowl in the microwave), heat the beans just to warm them.

Fry the eggs to your preference.

(I like scrambled eggs so I... beat the eggs with 1/4 cup milk, season with salt and pepper and cook and stir them in melted butter in a frying pan over medium-high heat. It's also great with poached eggs.)

Place a tortilla on a plate. Liberally spoon beans over the tortilla. Place cooked egg on top of the beans and then spoon tomato and steak mixture over it. Repeat for each serving.

Add sour cream and garnish with fresh cilantro for a hearty breakfast or even dinner.


Tender flank steak in a tomato sauce served over a tortilla with refried beans and an egg. It's tasty and it's filling.
