
Maple Nut Pancakes

(6 servings)

- 2 cups pancake mix
- 1 1/2 cups water
- 1/2 cup brown sugar
- 2 Tablespoons vanilla extract
- 1/4 cup pure maple syrup

chopped nuts - optional
Mix all ingredients into a medium sized mixing bowl. Mix until smooth and there is no bubbles in the batter.
Dollop onto large skillet placed at 350 degrees
(DO NOT overcook as the nuts may burn).

The recipe above is a little unclear and doesn't specify the kind or amount of nuts to use. Plus the amount of vanilla seems like a bit much. While I try to contact the recipe submitter, please try this very similar recipe that I found on AuntJemima.com instead.
Maple Nut Pancakes (Alternate Recipe)
- 1 cup Aunt Jemima Original Pancake & Waffle Mix
- 3/4 cup milk
- 1 Tablespoon oil
- 1 egg
- 1/8 teaspoon maple flavoring
- 1 Tablespoon walnut chips
Mix ingredients well, and cook as directed on package. Top with Aunt Jemima Syrup.
Obviously, you can use a different pancake mix or syrup (just follow directions for amount of liquid on the package) but since I grabbed this recipe from Aunt Jemima I want to give credit to those good products.

For a less thicker batter, add more water. For a fuller more sturdy mixture, add less water. If desired, add chopped nuts to the batter to kick up the flavor and add some crunch to the texture.
