Bacon Sirloin Scramble

(4 servings)

  • 10 slices bacon - cooked and crumbled
  • 2 pounds sirloin steak - about 1-inch thick
  • 1 large onion - sliced in rings
  • 2 garlic cloves - sliced
  • 5 jalapeno peppers - sliced
  • 1 red bell pepper - thinly sliced
  • 1 green bell pepper - thinly sliced
  • 3 Tablespoons water
  • 2 teaspoons salt
  • 2 Tablespoons cilantro - chopped
  • 1 and 1/2 Tablespoons lime juice
  • 3/4 cup Monterey Jack cheese - shredded
Slice the steak into 1-inch strips.

In a large lightly-oiled skillet over medium-high heat, cook the steak in batches... about 3 minutes per batch - stirring occasionally. Set aside.

In the same skillet, cook the onions - flipping often - until browned... about 4 minutes.

Reduce heat to medium-low and add the garlic and all peppers. Cook for 4 more minutes - stirring often.

Add the bacon and steak to the skillet along with the water. Sprinkle with salt and cook - stirring occasionally - until the water has all cooked out - about 5 minutes.

Remove the skillet from the heat and stir in the cilantro and lime juice.

Sprinkle with cheese while still hot.


There's no egg in this scramble recipe. But it goes great as a side dish with eggs or in a tortilla with scrambled eggs to make deluxe breakfast tacos.
