
Eggs Monterey

(4 servings)

- 2 6-and-1/2-ounce jar of artichoke pieces in water

4 Eggs
-
1/2 Cup milk
-
4 Green onions -- minced including tops
-
1/2 Cup prepared pesto
-
8 ounce Monterey jack cheese -- grated
-
6 saltine crackers -- crushed
-
Sour cream
Pre-heat oven to 350°F.
Drain and chop artichokes. Set aside.
In a medium bowl beat eggs to lemon color. Add artichokes, milk, onions, pesto, cheese and crackers to the eggs. Mix ingredients together and pour in an 8X8" buttered pan. Bake 35-40 minutes.
Cut into squares, garnish with sour cream to serve.
