Eggs Monterey

(4 servings)

  • 2 6-and-1/2-ounce jar of artichoke pieces in water
  • 4 Eggs
  • 1/2 Cup milk
  • 4 Green onions -- minced including tops
  • 1/2 Cup prepared pesto
  • 8 ounce Monterey jack cheese -- grated
  • 6 saltine crackers -- crushed
  • Sour cream
Pre-heat oven to 350°F.

Drain and chop artichokes. Set aside.

In a medium bowl beat eggs to lemon color. Add artichokes, milk, onions, pesto, cheese and crackers to the eggs. Mix ingredients together and pour in an 8X8" buttered pan. Bake 35-40 minutes.

Cut into squares, garnish with sour cream to serve.
