Honey Ginger Mellons

(4 servings)

  • 6 cups mellon (honeydew and cantaloupe are my favorites) - cut into 1 inch cubes
  • 1/4 cup honey
  • 2 teaspoons ginger root - minced
  • 1 teaspoon lime zest
  • 1 teaspoon orange zest
In a microwave-safe bowl, mix together the honey, zests and ginger root. Heat on high in microwave for about 20 seconds. Set aside and allow to cool.

In a large bowl, toss the mellon pieces with the sauce.

Serve immmediately.


You can store this in the refrigerator for 5 days, but it's always best when super fresh.
