Finnish Pancakes (Souffle-Style)

(8 servings)

  • 4 large eggs
  • 2 cups milk
  • 2 Tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour
  • 4 Tablespoons butter
Preheat oven to 450 degrees.

Melt butter in a 9" x 13" pan. Beat the eggs and milk together. Add the sugar, flour and salt. Pour batter on top of melted butter.

Bake for 18 to 23 minutes.

Serve with maple syrup, jam or butter.


This dish is not quite pancakes, not quite French toast, not quite a souffle, but really rich and yummy.
