S.O.S. (Low-Fat Version)

  • 6 slices healthier bread (like multi-grain or whole-wheat)
  • 2 3-ounce packages dried chipped beef
  • 2 and 1/2 cups milk
  • 2 Tablespoons olive oil
  • 2 Tablespoons flour
  • 1 Tablespoon coarsly chopped fresh thyme and parsley
  • salt and pepper to taste
Heat oil in a fry pan at medium-high heat. Chop the dried beef into 1/2 inch pieces and saute in oil until heated. Add the flour and stir until the beef is evenly coated. Reduce heat to medium, add the milk and cook until thickened siring ocasionally. Stir in spices.

Serve over toasted bread.


A healthy take on a classic dish. Add more flour to cooking mixture if a thicker consistency is desired.

Saute 1/2 small onion chopped, before adding the dried beef. Continue through the recipe as written, but as a last step stir in two hard boiled eggs that have been coarsely chopped. Goes from very good to awesome!
