The quintessential perfect basic scramble, note BASIC. Gotta laugh at those who say cheese is better or whole milk is too milky. Reading words like low-fat or not a specialty scramble is hard! Oh, and the cream of tartar suggestion? Excellent if you're not in a milk mood.

If this were listed as a cheats method I may agree it is good, but certainly not perfect. The bain Marie (water bath) makes much better scrambled eggs, though it does take more effort.

Sorry but the best way is to make then in a pan (like you'd use to heat beans etc) not a frying pan. Beat eggs in a bowl, heat butter in the pan, wait until butter is sizzling but not brown, pour in eggs. Stir continually until eggs 30-40% cooked. Take off heat. Sir in milk or cream. Continue to stir until absorbed & eggs are as you like them. Beautiful! - Gerald Duniec

I was scrambling eggs this morning and I put some milk into the eggs and my son thought I was an idiot. He always criticizes me if I do something different, but I have always put milk in my eggs when they are scrambled.

Mr. Breakfast, I love your website! I find, though, that eggs are best without the addition of milk. If you stir them constantly from the time they hit the pan to your favorite done-ness, they will be very creamy!

Nothing wrong with this recipe but if you're feeling decadent you can't beat the recipe that Gordon Ramsay has up at YouTube. Essentially: eggs and a pat in a cold pan. Put on heat and stir/whisk together. Remove from heat for a while, keep stirring. Back on heat and keep going. Just as it starts to stick together, remove from heat again and add some cream (how much is up to you and depends on how many eggs you've got in there). Then place back on heat and continue stirring. Add any extras (cheese, onions, spices etc) at the end or after you've plated it. I promise you, this will be the most delicious scrambled egg you have ever eaten.
