I made this with cauliflower and potato - 50/50. I fried the bacon solo, then set it to the side (on a paper towel), drained all but about 1 tablespoon of the grease from pan, then added 1 tablespoon Olivio and the onions. Once onions softened, I added the potatoes, stir fried for about 5-8 minutes, then added the cauliflower. Cooked all until nicely browned. Served topped with a little cheddar cheese, the bacon crumbles and some chopped green onion. Pretty delish and reduced carbs. Win-win! This is a great side dish for any mealtime. Thanks for the recipe idea.

I have tried this also and find that turkey bacon Oscar Mayer's Louis Rich is just as nice and a lot less fat!

"It's good.... in a greasy sorta way. Not sure if it helps with my new found healthy eating, when it feels like a load of grease. Might suit the, "huraay! I can eat as much fatty crap as i like!" atkins people."

Maybe before you make an ignorant comment, you should learn grammar, spelling, punctuation, capitalization, etc. and learn about the weight loss plan you are commenting on before you say something that is rude and incorrect.

Found this recipe while trying to figure out breakfast and it was delicious! I didn't use any additional butter as the bacon seemed to add enough fat to brown the cauliflower. Yummy!
