Sounds great but I didn't see anything about the pie having a top cover to it or it doesn't call for a top crust. Oh well.

You can make this without the pie crust. Just put everything in a well-grease pie plate. We make this (or very close variations) all the time.

This looks fantastic! Ya'know, we never had a breakfast on Thanksgiving. Even as a kid I was up early with the smell of Turkey in the oven, my male cousins would come over and we'd take off into the woods for a hike until dinner was done. I think this year I am going to make this for breakfast! Thank-you!

We make a similar dish - called breakfast pizza. We use crescent roll dough and add a few TBLS of parmesan cheese to the top. We also press the potatos with a towel/ppr towels to decrease moisture. Everything but the eggs can be prepared and assembled the night before, cover in plastic wrap and regrigerate. Add eggs/milk to top in morning and bake. EVERYONE loves this recipe, so make plenty. We use is for every brunch and holiday breakfasts.

I made this for our school pitch-in. Everyone loved it. I accidentally used 1/4 cup of Green and Red peppers---I need to use my bifocals more often. It tasted great with the alteration and the color was magnificent! I would also like to add that the recipe was very easy to follow. I would highly recommend this recipe even for a novice.

This is the best quick and easy breakfast pie! It is so good any time of the day! I teach and all my friends beg me to make this when we do a breakfast! It is great for Christmas with the red and green veggie colors! You'll love it!
