Egg Casserole

  • 6 slices white bread - torn into small pieces
  • 6 large eggs - beaten
  • 2 and 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded Cheddar cheese
  • 1 pound sausage - cooked and crumbled
Mix all ingredients together (except sausage) in a buttered 9 x 13-inch pan. Top with the sausage. Cover with plastic wrap and refrigerate overnight. Bake 350 degrees for 35-40 minutes.


Can a breakfast casserole really be this easy? The instructions are basically mix, wait and bake. Yet, the result is a tasty dish that's sure to please every time.

I've used variations of this recipe for years. I like to use egg substitutes (e.g. Egg Beaters instead of whole eggs) and turkey sausage. I'll throw in some canned pimentos and canned mushroom pieces, too. To make it really fluffy, use half & half in place of some of the milk. I've used French or Italian style bread or even a box of seasoned croutons place of the more pallid stuff called white bread.
