Fluffy French Toast

  • 3 large eggs - beaten
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 and 1/2 cups milk
  • 1/2 cup shortening
  • 6 slices of firm bread - cut in half diagonally
Combine eggs, flour, baking powder, sugar & salt in a shallow dish; add 1/2 cup of the milk & blend.

Pour remaining milk in a second dish.

Melt shortening in heavy skillet or electric skillet. Dip bread, one piece at a time, in the milk, then batter. Turn to coat both sides.

Fry till golden brown on one side. Flip, cover skillet so batter will puff & cook until second side is golden.

Makes 4 servings of 3 pieces.


This is my grandma's recipe - many people over the years have enjoyed this french toast. I find that I can get a make a few more pieces than the recipe calls for because there is always remaining batter. Left-overs freeze well, just microwave them for a 1 minute to thaw and pop in the toaster for a bit to get crispy again.

This recipe is my absolute favorite!! @Dipitydoo - Try using a firmer bread. I use sourdough and it's never soggy.

I noticed that dipping the bread in the milk before the batter makes the inside of the french toast soggy and it never cooks out so I omitted it and just dipped it into the batter and added confection sugar and cinnamon.

Has anyone noticed that in the "Fluffy French Toast" recipe it mentions the word 'mild' instead of 'milk' ? I think this may be an error. I haven't made the recipe yet due to this error.
