Vanilla Almond Granola

  • 4 and 1/2 cups rolled oats (quick or old fashioned)
  • 3 cups slivered almonds
  • 2 cups sunflower seeds
  • 1 cup safflower oil
  • 1/2 cup malt syrup extract
  • 1/2 cup maple syrup
  • 1 Tablespoon vanilla
  • 1 and 1/2 Tablespoons ground cinnamon
  • 1/2 Tablespoon almond extract
Pre-heat oven to 325 degrees.

In a very large bowl, mix the oats, almond pieces, sunflower seeds and cinnamon together.

Add all remaining ingredients and stir well.

Spread the mixture over two 9 x 12 pans. Bake for 25 to 30 minutes until golden brown - stirring two times during cooking so the granola browns evenly.

Allow granola to cool to room temperature before enjoying. Stores well in an air-tight container for two weeks.


This recipe is for a big batch of granola so your whole family can enjoy it for a couple weeks.
