Pumpkin Apple Streusel Muffins

  • 2 cups apples - finely chopped
  • 1 cup canned pumpkin
  • 2 and 1/2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 Tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs - beaten
  • 1/2 cup vegetable oil
In large bowl, combine flour, sugar, pumpkin pie spice, baking soda and salt; set aside. In medium bowl, combine eggs, pumpkin and oil. Add liquid ingredients to dry ingredients; stir just until moistened. Stir in apples. Spoon batter into greased or paper-lined muffin cups, filling 3/4 full. Sprinkle Streusel Topping (below) over batter.

Bake in preheated 350 degree oven for 35 to 40 minutes, or until toothpick comes out clean.

Easy Streusel Topping:

In small bowl, combine 2 tablespoons all-purpose flour, 1/4 cup granulated sugar and 1/2 teaspoon ground cinnamon. Cut in 4 Teaspoons butter. Bat around until mixture is crumbly.

I make this recipe every year for Christmas morning and they go like crazy. I also made them to attract people to a yard sale we were having one year - people were coming up the street to buy them.

This was a HIT with family and guests! Used the 12-per-pan cupcake size pan so I adjusted the cooking time to more like 20-25 minutes. Had them for Saturday brunch and Sunday dessert. I will be keeping this recipe and sharing with everyone!

Yummy!!! - for pumpkin lovers like me this is yummy treat for any time of the day. Even my picky 4 year old loved it!!! The taste and the smell is a perfect reminder of fall, and we made it in August!
