Mediterranean Breakfast Wrap

  • 1 package of lavash (unleavened bread)
  • 5 eggs - beaten
  • 6 slices of bacon - cooked crisp
  • 3 Tablespoons milk
  • 2 oz mild feta cheese (1/8 cup)
  • 2 Tablespoons chopped sun dried tomatoes packed in oil
  • salt to taste
  • cooking spray
  • chopped oregano (optional)
Heat a large skillet on medium heat; cook bacon. Remove when crisp and drain on paper towels. Wipe pan clean of bacon dripping and spray with cooking spray.

Beat eggs with milk and a pinch of salt. Add to skillet and cook as if it were an omelette. When eggs are nearly set, sprinkle with sun dried tomatoes, feta and oregano. Cook another minute or until feta has softened.

Cut the "omelette" into 3 equal portions - in a rectangular shape. Lay egg on the lavash, top with bacon and extra cheese if desired, and wrap like a burrito. Cut each wrap in half and serve.


If desired, place the wraps back in the skillet to crisp the lavash before serving.

Pretty good. The feta and sun-dried tomatoes go good with eggs.

From Pepper

Where in the Mediterranean diet is there bacon? Pork isn't even mentioned on any of the list of foods they eat. I may try it without the bacon. Looking for healthy recipes.
