Peanut Butter Banana Streusel Muffins

  • 1 cup all-purpose flour
  • 3/4 cup quick cooking oats
  • 1 Tablespoon baking powder
  • 1/3 cup packed brown sugar
  • 3/4 cup milk
  • 1/2 cup peanut butter
  • 1/2 cup mashed ripe banana (2 over-ripe bananas)
  • 1 large egg - beaten
  • 1/4 cup butter - melted and cooled
  • 2 Tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1/3 cup mini-chocolate chips - optional

  • Streusel Topping:
  • 1/3 cup all-purpose flour
  • 1/4 cup butter (melted)
  • 1/4 cup packed brown sugar
  • 2 Tablespoons quick cooking oats
I liked these, but the bites with chocolate chips were way better than bites without chocolate, so I strongly recommend using that optional ingredient. Without the chocolate, this recipe could probably use some more sugar. I'd taste the batter before you dollop it out. Over-ripe, partially brown bananas are way sweeter that fresher, all-yellow bananas. So you'll want to adjust your sugar accordingly. On the plus side, the streusel topping was terrific. The ingredients are simple, but it added a nice, nearly-crunchy texture that offset the rest of the muffin. Bottom Line: I'd give this muffin a B+. It could use some creative adjustments. How To Make Peanut Butter Banana Streusel Muffins

Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.

In a large bowl, mix together the flour, oats and baking powder.

In a separate medium bowl, beat together the brown sugar, milk, peanut butter, mashed banana, egg, butter, oil and vanilla.

Add the wet ingredients to the dry ingredients and mix just until the dry ingredients are moistened. Fold in chocolate chips if using.

Fill prepared muffin cups 3/4 full.

In a small bowl, stir together all of the ingredients for the streusel topping. Sprinkle topping evenly over muffins.

Bake in preheated oven for 18 to 20 minutes, until golden brown.

Cooking Note From Mr Breakfast:

For me, there was enough batter left over to make 2 extra muffins. I decided to use that batter to make one 3 x 3-inch coffee cake which took 30 minutes to bake.
